Easy recipes that the family will enjoy and it will not take a lot of time.

Muffin Tin Pancakes
Ingredients
2 cups - Complete pancake mix
1 3/4 cups of milk
1 tsp of brown sugar
1 tsp of vanilla extract
Optional Toppings
Chocolate Chip
Nutella drops (freeze a tsp of nutella and place in the middle of batter)
Blueberries
Strawberries
Raspberries
Cinnamon Sugar (1 tsp cinnamon, 2 tbsp of sugar mixed)
Bacon bits
Sausage crumble
Instructions
Preheat oven to 350 degrees.
Grease mini muffin tin evenly and pour batter into muffin tins (I like to use 1/4 cup of batter per tin).
Add optional Toppings.
Place in the middle rack in the oven and bake for 20 minutes. When golden brown remove from oven, and cool for 2 minutes then pop out each muffin with a spoon.
Enjoy with syrup or on its own.
Quick Note:
I make a batch of these on Sunday nights and place them in the freezer. The kids pull them out and microwave for 2 minutes (cover with paper towel) and they love them. I especially like to make this for them when they are taking exams at school the next day. This way they do not end up with an empty stomach before an exam.
