InstaPot Black Beans

Ingredients
1 lbs dry black beans
2 garlic cloves (crushed)
1/4 cup of pepper & onion medley (from freezer)
2 large potatoes (cubed)
1 tbsp extra virgin olive oil (EVOO)
1 tsp cumin
1 tsp paprika
2 tsp abobo
1/4 cup of tomato sauce
Steps
Turn on Brown/Saute setting
Add EVOO, garlic, pepper medley, and potatoes
Saute for 5 minutes then add adobo, cumin and paprika
Add dry beans and saute for 2 more minutes
fill the pot to the 1/2 way mark
stop setting and change to Bean setting and increase minutes to 40 minutes. Close and turn lid. (make sure valve is closed)
When time is up stop warm setting, open lid and stir, and taste (at this point you can add more adobo if you feel it needs it)
turn on brown/saute setting and saute for 10 minutes to thicken the beans
You can serve the beans over rice, and even serve over eggs.
Tip:
You can freeze the beans in portions and store for another day. When you reheat just add a cup of water.
