Easy Muffin Tin Eggies...

Easy recipes that the family will enjoy and it will not take a lot of time.

I came upon the idea on Pinterest, but for me and my family it was just too bland and boring. So with husband and I began to experiment on different flavors and crust.

Muffin Tin Eggies

· 10 Eggs (you can replace with 32 oz carton of egg beaters)

· 2 tbsp of milk

· 1 tbsp of butter (I use I Can’t Believe It’s not Butter)

· 2 pinches of salt (I use Himalayan Salt)

· 2 Pinches of black pepper

· ½ cup of sharp shredded cheese

· 2 cups of shredded potatoes (I prefer Simply Potatoes)

· 2 tbsp of melted butter


Optional

· ¼ cup of tomatoes

· ¼ cup of green peppers (yellow or red works too, *I prefer red)

· ½ cup of bacon (turkey bacon taste better)

· ½ cup of baby spinach finely cut

· ½ cup onions


Instruction

  • Preheat oven at 350˚

  • In a large mixing bowl beat eggs, salt better, butter, and milk.

  • In a separate bowl mix shredded potatoes, melted butter, and 3 tablespoons of the shredded cheese.

  • Generously grease muffin tin and place 2 table spoons of the potato mix on the bottom and press down.

  • Take egg mixture add the rest of the half of the remaining cheese, and any of the optional ingredients. I like to use tomatoes, turkey bacon, and onions. You may add any ingredient your kids prefer. Mix well.

  • Pour mixture into tins until you almost reach the top.

  • Bake for 20 - 25 minutes

  • Take out and take the other half of the cheese and sprinkle over the top. Place back in the oven for other 5 minutes.

Pull out of the over and let stand for about 2-4 minutes and serve with bacon. Or you can put it on a bagel or English muffin. You may also cut in half and put it in a wrap.


These eggies may also be prepared on a Sunday for the kids breakfast for the week. When cooled put one or two in zip lock bags for individual use. The kids can pull them out in the morning and warm up in the microwave for 2 minutes. These were a life saver for me during testing times. There were times that I left the house a lot earlier than the kids did and I did not want them to get on the bus on an empty stomach, especially on a test day. So I would make these and change it up with different toppings or meats and they would warm them up and take them. They really did enjoy them.


By the way you may substitute the potato crust with flavored shredded potatoes, sweet plantains, or even crescent dough. Change it up and surprise the family. I hope you enjoy them as much as we did.
